Gotu Kola (Centella Asiatica) Stir Fry

Gotu Kola (Centella Asiatica) is a herb in the parsley family and considered to be one of the healthiest greens with a number of health benefits. This herb has also been used in traditional Chinese and Ayurvedic medicine.
This Stir Fry Dish comes together in 10 minutes with just a handful of pantry ingredients. This side dish is quick, easy and nutritious and pairs well with any protein over rice.
This recipe could not be simpler, all you need is a large non-stick pan and some basic ingredients and condiments and it’s ready to be served in no time.
Ingredients:
Gotu Kola: Pre-washed 100g Gotu Kola from the supermarket.
Oil: I use coconut oil but you can use any other neural oil
Garlic: I love garlic so I added extra garlic to this stir fry. .
Onions: Half a medium size onion chopped finely
Seasoning: Salt and pepper
Soya sauce: If making the dish gluten free, use tamari. Both options add a salty, umami-rich flavor
100g Gotu Kola
7-8 medium size garlic cloves
½ Medium Onion
2 Tbsp. coconut oil
1 Tbsp. Soya sauce
½ Tsp salt
¼ Tsp Black Pepper/chilli flakes
Wash the Gotu Kola, roughly chop it up and let the water drain
Heat 2 Tbsp. of coconut oil in a large non-stick pan. Once the oil is shimmering, add the garlic, onions, some salt and some pepper or chilli flakes.
Cook the Garlic and the onions for 5 minutes, until they turn golden to give it that toasty garlic flavor then add the chopped Gotu Kola.
Stir the Gotu Kola occasionally so it cooks evenly.
Once the Gotu Kola is cooked for 5-6 minutes, add 1 Tbsp. of soya sauce and mix well.
Remove from the heat and serve.
